Grilled Zucchini with Goat Cheese and Balsamic Vinegar

You can prepare this on a grill or in a skillet, I’ve done it both ways.  On the grill I just put them directly on it so it would have the char marks, but you could also use skewers or cook it on foil.  This can be ate as a meal, appetizer, or side dish.  The balsamic vinegar really complements the cheese and zucchini, it all melts in your mouth.  Be careful, this dish is addicting!


  • coconut oil
  • 1-2 zucchinis (1/4 inch slices)
  • 1/4-1/2 cup of goat cheese crumbles
  • balsamic vinegar
  1. Spread coconut oil thinly on zucchini slices.
  2. Cook on grill or skillet for about 10-12 minutes, flipping once.
  3. Place on plate, sprinkle with cheese, and drizzle with balsamic vinegar.

Vegetarian Pizzas

I’ve found making pizzas as a quick meal that also includes some leftovers.  The toppings are limitless and I usually just choose random vegetables I have purchased for other meals.  Before becoming a vegetarian meat was my go-to topping on pizzas.  I’ve found with trying different vegetables on my pizzas they are full of flavor and more satisfying than my former “meat lover” preferences.

For pizza crusts I advise AGAINST Kroger brand, it tasted like cardboard.  Mama Mary’s brand (I’ve bought at Walmart) is made with whole wheat and is a thin and crispy style crust.  I spread olive oil on the bottom of the crust to make it crispy.  Before I spread the pizza sauce I like to spread minced garlic and pesto on the crust to add flavor. For pizza sauces I tend to prefer a white sauce such as alfredo or ranch dressing.  Sometimes I mix half white sauce and half spaghetti sauce.  For cheese I usually buy some pre-mixed mozzarella, Asiago, provolone, and romano cheeses.  I also like to sprinkle feta after I have put the other toppings on the pizza.  If you broil the oven it browns the cheese on top too.

  • spinach

  • banana peppers
  • tomato slices or halves of cherry tomatoes
  • onion slices
  • marinated artichoke hearts
  • mushrooms
  • sun dried tomatoes
  • kale
  • pesto
  • chili pepper flakes
  • garlic cloves

Broiled Zucchini Parmesan Knife & Fork Sandwich

So I got this recipe from the Student’s Vegetarian Cookbook by Carole Raymond, but I did modify it slightly.  It takes only about 10-15 minutes for preparation and cook time.  This portion is for one serving, but you could also serve this is an appetizer by splitting this portion between two people.  The recipe in the book calls for multigrain bread (2 pieces), but I did one slice of multigrain and one piece of garlic toast.  Both were delicious so really do whatever you prefer.  I think the garlic toast makes it more of an appetizer than a meal.


  • 2 teaspoons olive oil
  • 1/4 cup chopped onions
  • 1 clove garlic minced
  • 1 cup grated or thinly sliced zucchini (I used 1 zucchini that created more than 1 cup)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1 tomato, sliced
  • 2 slices of bread (garlic, whole wheat, multigrain, whatever your preference)
  • 1/2 cup grated parmesan cheese
  • pepper
  1. To keep the bread from being soggy I cooked the garlic bread so that it almost done cooking before I started step number 2. I also recommend toasting the wheat toast while you saute the food in 2.
  2. Saute the onion and garlic in the oil for about 3 minutes.  Add the zucchini, basil, and oregano for about 3 minutes.
  3. Layer the tomato slices and the zucchini on the bread and sprinkle with cheese.
  4. Broil until the cheese melts (1-2 minutes). Pepper to taste.
