Rice Cake Snacks

So I have fallen back in love with rice cakes lately.  I always enjoyed them growing up and impulsively bought some at Whole Foods recently.  The brand I bought, Lundberg, offsets 100% of the electricity used to manufacture their products with renewable energy.  How awesome is that?  I also love that their organic brown rice cakes  have only two ingredients: organic whole grain brown rice and sea salt. I also have a new obsession with coconut manna and these two pair perfectly!  Coconut manna is usually hard at room temperature so to make it spreadable I warm the jar in warm water on the stove.  Don’t bring the water to a boil though!

Greek Style Eggs

“Recognize meat for what it really is: the antibiotic- and pesticide-laden corpse of a tortured animal.” -Ingrid Newkirk

Ingredients

  • 2-3 eggs
  • 2 minced garlic cloves
  • 3 baby portobello mushrooms
  • handful of spinach
  • 1 tablespoon diced onions
  • coconut oil
  • 1/4 cup feta cheese
  • optional: hot sauce

First, sauté the spinach, onions, garlic, and mushrooms in coconut oil until the spinach is wilted.  Put the cooked veggies on the plates for serving.  Then, fry the eggs to your preference.  Serve the eggs on top of the vegetables, sprinkle some feta cheese, and I top it all off with hot sauce because I cannot eat eggs without some hot sauce!

Peanut Coconut Butter Banana Sandwich

What kind of messed up, brainwashed society are we living in where exploitation and killing are considered “normal” and compassion and non-violence are considered “extreme”?

A grown up twist on the peanut butter and banana sandwich.  This can be a breakfast, lunch, or healthy dessert!

  • bread/toast
  • banana
  • coconut and peanut spread (peanut butter, coconut oil, and agave)
  • cinnamon

Toast your favorite type of bread.  Then spread Earth Balance coconut & peanut spread, or you can make it yourself!  Mix peanut butter, coconut oil, and agave.  Add a sliced banana, and sprinkle with cinnamon.  Talk about easy and delicious 🙂

Granola with Coconut and Chia Seeds

“Nothing will benefit human health and increase the chances for survival of life on Earth as much as the evolution to a vegetarian diet.” -Albert Einstein

An easy way to add some variation to granola for breakfast is to add some shredded coconut and chia seeds.  For a vegan friendly breakfast use your favorite dairy substitute such as coconut milk or soy milk, I use whatever I have on hand.

You may be thinking are these chia seeds the same seeds for those silly Chia Pets?  Why yes, yes they are.  Chia seeds are full of antioxidants (more than blueberries!), omega-3 and omega-6 fatty acids, and fiber.  Other vitamins such as iron, niacin, zinc, phosphorus, magnesium, manganese, and copper are also in chia seeds.  Chia seeds expand and form a gel after sitting in liquids for 30 minutes, and it is believed that this also takes place in the stomach slowing down the process of converting carbohydrates into sugar.  This swelling also helps to cleanse the colon by lubricating and strengthening peristaltic action.  Chia seeds are nearly flavorless (just adds a little crunch) so you can add them to a range of foods.  I often add them to drinks, yogurt, or on top of salads.  I order mine in bulk from Nutivia because they keep for 2 years so you don’t have to worry about them going rancid.
