Peanut Coconut Butter Banana Sandwich

What kind of messed up, brainwashed society are we living in where exploitation and killing are considered “normal” and compassion and non-violence are considered “extreme”?

A grown up twist on the peanut butter and banana sandwich.  This can be a breakfast, lunch, or healthy dessert!

  • bread/toast
  • banana
  • coconut and peanut spread (peanut butter, coconut oil, and agave)
  • cinnamon

Toast your favorite type of bread.  Then spread Earth Balance coconut & peanut spread, or you can make it yourself!  Mix peanut butter, coconut oil, and agave.  Add a sliced banana, and sprinkle with cinnamon.  Talk about easy and delicious 🙂

Green Goodness Grilled Cheese

This recipe is a grown-up twist on a grilled cheese sandwich.

Ingredients

  • bread
  • mayo or butter
  • pesto
  • 2-3 slices of mozzarella
  • chevre goat cheese
  • spinach
  • 1/2 avocado

Spread pesto on one piece of bread.  Then layer the sandwich with mozzarella, spinach, goat cheese, avocado, mozzarella, and slice of bread.  Use either butter or mayo on the side of the bread that will touch the skillet.  Cook each side of the sandwich for about 3-4 minutes on each side.  I think this sandwich would also work well with a panini type of toaster, but I haven’t made it that way yet.  I tested this out on my mom this weekend when she visited me and she approved!

Banana Bread

I love banana bread.  As a kid I used to hide the bananas so that they would ripen too much and my mom would have to make banana bread.  I make my banana bread with whole wheat flour so it will be darker in appearance than traditional banana bread.  It also makes it trickier to tell when it is done so be sure to check it with a toothpick because it make look finished before it is ready.

Ingredients

  • 1 cup sugar
  • 1/4 cup butter, softened
  • 1 egg
  • 2 very ripe bananas
  • 1/4 cup cream
  • 1/2 teaspoon vanilla
  • 1 1/4 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  1. Preheat oven to 350. Grease the bottom of an 8×4-inch loaf pan.
  2. In a large bowl, stir sugar and butter until well mixed.  Stir in bananas, cream, and vanilla; beat with spoon until smooth.  Stir in flour, baking soda, and salt until well moistened. Pour into cake pan.
  3. Bake for about an hour, a toothpick in the middle should come out clean.
