Granola with Coconut and Chia Seeds

An easy way to add some variation to granola for breakfast is to add some shredded coconut and chia seeds.  For a vegan friendly breakfast use your favorite dairy substitute such as coconut milk or soy milk, I use whatever I have on hand.

You may be thinking are these chia seeds the same seeds for those silly Chia Pets?  Why yes, yes they are.  Chia seeds are full of antioxidants (more than blueberries!), omega-3 and omega-6 fatty acids, and fiber.  Other vitamins such as iron, niacin, zinc, phosphorus, magnesium, manganese, and copper are also in chia seeds.  Chia seeds expand and form a gel after sitting in liquids for 30 minutes, and it is believed that this also takes place in the stomach slowing down the process of converting carbohydrates into sugar.  This swelling also helps to cleanse the colon by lubricating and strengthening peristaltic action.  Chia seeds are nearly flavorless (just adds a little crunch) so you can add them to a range of foods.  I often add them to drinks, yogurt, or on top of salads.  I order mine in bulk from Nutivia because they keep for 2 years so you don’t have to worry about them going rancid.
